Today you can find something new on our blog, namely a delicious cake recipe! Because what good is a nice cake topper without the right cake?
Our favorite cake recipe for Easter is a moist carrot cake - perfect for our new "Happy Easter" cake topper* to put in the limelight!
For the carrot cake you need the following ingredients and utensils:
First you preheat the oven to 180 degrees top / bottom heat and grease the springform pan or line it with baking paper.
Now wash and peel the carrots and grate them finely. Add the zest and a tablespoon of organic lemon juice to the carrots.
Mix the flour with the baking powder and the ground almonds.
Then you separate the eggs, beat the egg whites until stiff and let the sugar trickle into them. Gradually add the egg yolks as well.
Finally, add the carrots and the flour-almond mixture to the bowl and mix everything with a whisk or spoon.
Pour the dough into the mold and bake it on the middle rack for about 35 minutes.
Let the finished cake cool down on a wire rack.
Once it has cooled down completely, mix the icing sugar with 2 - 3 tablespoons of lemon juice for the icing. Depending on the consistency, add some water. Now spread the icing on the cake and decorate it with the chopped pistachios and carrots.
